Estate Presentation: Château de la Négly and the Clos des Truffiers cuvée

Located in Occitanie on the prestigious La Clape massif, facing the Mediterranean Sea, Château de la Négly, masterfully managed by the Paux-Rosset family with advice from the renowned oenologist Claude Gros, is one of the most revolutionary and awarded estates in all of Languedoc. The "Clos des Truffiers" cuvée (initially vinified under the domain's aegis but originating from an exceptional isolated plot in the Saint-Pargoire terroir) is an absolute legend in global viticulture. Produced in confidential quantities with microscopic yields, this "garage wine" has elevated Languedoc to the pinnacle of international ratings (notably Robert Parker's mythical 100/100), establishing itself as a highly sought-after collector's icon.

Appellation and Terroir Presentation: Saint-Pargoire / Coteaux du Languedoc

This mythical cuvée comes from a unique plot of just over one hectare located in the commune of Saint-Pargoire. The terroir is characterized by an exceptional clay-limestone soil, particularly rich in lacustrine limestone, surrounded by truffle oaks that give the site a magical identity. This unique soil offers perfect water regulation, allowing the old Syrah vines to withstand high summer temperatures while phenomenally concentrating the berries, bringing a vibrant calcareous minerality to the wine capable of balancing monumental substance.

Vintage Presentation: The Sunny and Extraordinary Year 2003

2003 remains etched in European wine history as the year of the extreme and absolute heatwave. In the South of France, record summer temperatures pushed concentrations to rarely observed levels, leading to early harvests of grapes with monumental phenolic richness. In the hands of the greatest winemakers, this extraordinary vintage produced wines of colossal opulence, with incredibly dense textures, uniquely silky tannins, and an aromatic power of extraordinary dimension.

Description of the Bottle's Condition

This prestigious bottle is in an absolutely irreproachable and perfect state of preservation:
- Wine level: Ideal, original at the highest level.
- Label: New condition, impeccable, clean and perfectly preserved.
- Capsule: Perfect, intact, showing no defects or signs of wear. Rigorous storage in a private air-conditioned cellar.

Food & Wine Pairings and Serving Suggestions

Serving suggestions: Ideally serve at 16°C - 17°C in very large wine glasses. Given the monumental density of this cuvée, a one-hour decanting is highly recommended to allow the wine to fully deploy its aromatic complexity.
Gastronomic pairings: Such a monument calls for dishes of great gustatory power: a 'lièvre à la royale' (royal hare), a Tournedos Rossini topped with fresh black truffle, a wild boar stew with black olives, or a long-braised bear or venison leg.

Personal Note and Cuvée Singularities

"Clos des Truffiers 2003 is a monster of pedigree and opulence, a rare and speculative liquid work of art. On the nose, it's an olfactory shock of incredible intensity: blackcurrant cream, blackberry liqueur, nascent black truffle, noble tar, candied violet, wild black pepper, and dark chocolate. On the palate, the substance is colossal, with a phenomenal concentration that coats the palate with an imperial velvet. Despite its 15% volume, the wine maintains a magical harmony thanks to the nobility of its silky tannins and the underlying calcareous minerality of Saint-Pargoire. The finish is interminable, lingering for long minutes. A unique tasting experience, to be enjoyed at least once."
