The 2021 Vintage: Rarity and Classicism

The 2021 vintage is the antithesis of 2022 in Burgundy. Extremely difficult (marked by spring frost and hail), it resulted in historically low yields, making this bottle of Raveneau an absolute rarity. However, the wines produced, particularly in Chablis, are hailed as a return to classicism: they are of **crystalline purity**, highly precise, and possess a **vibrant acidity**, typical of great vintages of the old school.

The Raveneau Seal: Precision of the Terroir

Domaine Raveneau is one of the few estates to master the expression of the Chablis terroir with such finesse. The Montée de Tonnerre, a Premier Cru vineyard bordering the Grands Crus, brings a saline minerality and structure that Raveneau elevates through its traditional aging in used oak barrels. In 2021, this distinctive character translates into an **accentuated mineral tension** that perfectly showcases the purity of the Chardonnay.

Wine Characteristics: Finesse and Longevity

Raveneau's 2021 Chablis is a wine with great aging potential, tighter and less exuberant in its youth than the 2022, but with a complexity that will unfold over decades. It is a precise, vibrant wine, possessing a concentration resulting from low yields. It belongs to the lineage of great classic vintages, demanding patience and respect.

Tasting Notes: Chisel and Salinity

Although very young, the wine already displays distinctive characteristics:

  • Nose: Typical of cool vintages: lime, green apple, floral notes and an intense chalky sensation (flint/damp chalk).
  • Palate: Precise, incisive attack. The palate is dominated by acidity and minerality. It is a slender, energetic wine with a very saline and chalky finish. It embodies the finest expression of the purity of Kimmeridgian Chardonnay.
  • Potential: Very long aging potential. Waiting at least 5 to 7 years is advised to soften it (Peak 2030-2055).

Bottle Condition and Pre-Reservation Status

The bottle is in **perfect condition**, ensuring the integrity of this age-worthy wine. Due to its rarity and recent release, this wine is available for pre-order. Delivery is guaranteed, and shipping will begin on **January 5, 2026**.

Food & Wine Pairing and Service

Serve at 12°C. Its highly mineral and acidic nature makes it perfect for refined pairings:

  • Raw oysters and seafood.
  • The very delicate fish (Sea Bass, Turbot) barely cooked, with just a drizzle of butter.
  • Caviar, which will respond to its salinity.
