Presentation of the domain
Henri Maire, a historic figure in the Jura region, has contributed significantly to the rise of yellow wines. The estate produces Savagnins with long aging potential, with a precise and traditional style, faithful to the limestone and blue marl terroirs of Château-Chalon.
Presentation of the vintage
Château-Chalon 1988: 100% Savagnin aged under veil in untopped barrels for over 6 years, then transferred to clavelin (62 cl), the emblematic format of the appellation. Traditional vinification, protective veil of yeast, controlled oxidation: signature power, tension and salinity.
Presentation of the vintage
1988 in Jura produced straight and tenacious wines, made for aging. In Château-Chalon, the structural freshness and flavorful substance offer today a mature expression, with still very long potential: a cellar “immortal.”
Tasting notes
Walnuts and pecans, mild curry, dried apple, citron, saffron, hint of iodine. Full and taut on the palate, great acid energy, saline and spicy structure; very long, dry finish, on walnut, curry and citrus peel.
Bottle condition
Perfect condition: impeccable level and color; very beautiful label and capsule.
Food and wine pairings
Comté 24–36 months.
Chicken with morels and cream.
Mild curry cuisine (scallops, root vegetables).
