Le vin Jaune - Chateau Chalon 1990 - Domaine Auguste Pirou
It is the rarest and most controlled wine in the world, the most precise and the most mysterious at the same time, the only one defined by its color. Produced exclusively from the late-harvested Savagnin grape variety, its production is limited to 20 hectoliters per hectare. It acquires its extraordinary "yellow taste" only through long maturation in oak barrels, without topping up, for a period of at least 6 years, and can then surpass 5 generations of winemakers. The "clavelin" bottle is strictly reserved for it. Many regional recipes call for it, such as the famous Coq au Vin Jaune, the glory of Franche-Comté gastronomy.
As you can see from the pictures, the labels are not perfect; we filmed them to prevent them from falling off. The levels are very good, and the marks on the inside of the bottles testify to a long, immobile aging process.
