The Poetic Origin of the Name: Les Pêchers de Pavie
The history of Château Pavie dates back to antiquity, but its name holds a particularly charming anecdote. Long before vines reigned supreme on this exceptional hillside, the slope was covered with peach orchards. A very specific variety of red peach, with firm, juicy flesh, called "Pavie," was grown there. This fruit's name has remained etched in the land and the estate's identity.
Pavie's "Black Dot": A Historical Guarantee Seal and a Visual Distinction
Appearing in the late 1940s, the black mark at the top of the bottle is not a simple cellar release stamp but a design element of the capsule and for traceability. At the time, counterfeit fine wines were starting to become a problem. Unlike other châteaux that use uniform capsules, Pavie made this mark its signature. It's a guarantee that the capsule is original and hasn't been replaced by a neutral capsule during an unofficial "re-corking." The Valette family instituted this black "macaroon" so that a bottle of Pavie could be identified even when stored in a cellar rack.
The 1982 vs. Modern Style: The 1982 Pavie was produced during the era of the Valette family. At that time, the wine was sought after for its finesse and classic elegance. This is a total contrast to the more powerful and extracted style established by Gérard Perse after the acquisition in 1998. Drinking a 1982 means tasting the historical soul of Pavie. 82 is a legendary wine that has managed to last over forty years with audacious freshness.
