Domaine Boisseyt-Chol, a historic estate in Chavanay, produces Côte-Rôtie wines with a granite imprint on schist and gneiss terraces. Style: precise Syrah, spicy depth and floral elegance, in a faithful interpretation of the hillsides of the Côte Blonde.
Presentation of the vintage
Côte Blonde: Syrah from warm granite slopes, with a small traditional portion of Viognier in co-fermentation depending on the plot. Hand-harvested, partial destemming, long macerations; barrel aging (little new wood) ~18 months to blend the structure without masking the terroir.

2002 in the Northern Rhône offers a fresher, more slender profile. In Côte-Rôtie, the best bottles emphasize finesse, drinkability, and tertiary complexity: a style ready to drink today, while retaining the smoky-peppery signature of granitic Syrah.
Tasting notes
Ripe and refined nose: blackberry, violet, black olive, smoked bacon, pepper. Slender palate, melted tannins, savory heart of tapenade and black fruits; touch of blood and dried herbs. Salivating, persistent finish, more on elegance than power.
Bottle condition
Perfect levels and colors. Very dilapidated and torn labels; capsule and cork intact. Sale price adjusted accordingly, same prices for the three bottles . Wine over 10 years old: variations possible depending on storage. Sale as is.

Grilled rack of lamb, thyme jus.
Roasted pigeon, reduced jus and mushrooms.
